Abstract：Inordertooptimizetheextractionconditionsofpolysaccharidesfromwasteauriculariaauriculariabantheauriculariaau riculariabranwasusedasthematerialandtheyieldofpolysaccharidewasusedastheindex.Hotwaterextractionmethodandenzyme-ssistedextractionmethodwereusedtoextractpolysaccharidesfromauriculariaauriculariabran，andtheoptimalextraction processf polysaccharidefromauriculariaauriculariabranwasobtaindbysinglefactortestandresponsesurface method.Theresults showedthatthotialprosscodiiosofotateretationereasfls：soldqdati：4etrctioti3tue 81 ，so that polysaccharide yield was 5.251% .The importance order of influencing factors was C （extraction temperature）>A （solidliquid ratio） > B（extraction time）.Theoptimal conditions of enzyme assistedextractionwere：pH value4.4，solid-liquid ratio 1：15， temperature ，time4h，so thatpolysaccharideyieldwas 13.642% .TheimportanceorderofinfluencingfactorswasA （pH） D （time） > C（extractiontemperature）>B（solid-liquidratio）.Theresults showed thattheenzyme-assisted extraction method wassuperior tothehotwaterextractionmetodinextractingpolysaccharidesfromfungusbranInconclusion，itisfeasibletoextractpolysahrides from black fungus bran，which points out the direction of resource utilization of waste edible fungus bran.
