甜菜渣膳食纖維的提取與功能性分析

Extraction and functional analysis of dietary fiber from sugar beet pulp

AbstractTo improve the utilization of sugar beet pulp,sugarbeet pulp was used as raw material to analyze its main components such as soluble dietary fiber and insoluble dietary fiber.Dietary fiber was extracted using chemical and enzymatic (single and compound)methods,and the extraction rates of different methods were compared.The swelling powerand water-holdingcapacitywerealso measured.Theresultsshowed thatthe total dietar fiber content in sugar beet pulp was relatively high,at 43.57 g/100 . The extraction rate of dietary fiber using a combination of α (2 -amylase and cellulase was higher,reaching 65.27% . Theswelling capacity and water-holding capacity of soluble dietary fiber extracted by the enzymatic method were 4.8mL/g and 4.125g/g ,respectively,higher than those of insoluble dietary fiber.Theresults provide areference for the eficientutilization and production research of sugar beet pulp.

膳食纖維在蔬菜、水果、粗糧雜糧、豆類及菌藻類等食物中含量豐富,根據(jù)溶解性不同可分為可溶性膳食纖維(SDF)和不溶性膳食纖維(IDF),該元素雖然不能被人體消化吸收,但具有重要的生理作用。(剩余4075字)
